OK, I have a new food project...Jambalaya.

Now, I found a recipe in the Joy Of Cooking...but it seems so "basic". My thinking is that I will start there and then see what goodies I can add.

But I wanted to ask here if anybody makes this..or maybe, someone's mother or grandmother?

I am looking for something beyond the ol basic rice and sausage and tomato thingy. Yes, I will Google it..but again, I am hoping that someone has a family recipe that I can steal.

So...Jambalaya anyone?

Janice found a great recipe for jambalaya the other day and she tried it last week. She used turkey sausage instead of pork. Came out really tasty.

Hey, speaking of cajun cooking....Do you remember Justin Wilson? I used to love watching his show on PBS. I really miss him.

"I gar-ran-teee" Yea, I liked him. Always had a story or two to relate.

OK, here is what I did with MY take on this:

Cooked up bacon in a pot and put it aside. Cooked the chicken-andouy(sp) sausage in the bacon drippings and put that aside. Cooked a chopped up chicken breast in the same stuff and put it aside. Then I cooked up a chopped onion in the same stuff. Added garlic and a tablespoon of flour. Then I added a can of tomatos. (Interesting, in my research for this, almost ALL of the recipes called for canned tomatos!) I brought all that to a boil then added the rice (about 3 cups of cooked rice) and the meat that I had put aside. Let it warm for 10 minutes on VERY low heat and serve.

I gotta say, it was DAMM good. I also put in some Emeril's hot sauce cause I think that tobassco is a tad "vinegar-y". Tasty stuff and we have leftovers so *I* get a great lunch too!

It's one of those dishes that you hear about but never really know what it is. Yet, in the south, EVERYBODY would know what you are talkin about. Sorta like Gumbo too.

(Truth be told, Jambalaya is VERY similar to what we would call "Spanish Rice". It is also very similar to Chinese fried rice in technique.)

I've made something similiar using Zatarans Jambalaya rice mix as the base and adding cooked shirmp and turkey sausage. It is really flavorful but a bit spicy to my liking.

That would be the pre-packaged, commercialized Zatarans doing that.

Make the same recipe only use cooked rice. It will be somewhat blandish, but then you can add your own spice and heat to your liking.

For me, I need to add a bit of Dave's Insanity sauce!

(I say this because when I made this the other night, I made extra so I could have a few lunchs with it, so I have had the opportunity to try it a few times.)

On another note..I got my "grocery list" last night. A week from today I get to eat...every day....2 string cheese, 1/2 cup of cooked veggies and 2oz of grilled chicken along with 3 of the diet milk shakes. Hurray....food at last! Haven't eaten since June 11th.

That is HOT stuff. What is amazing is that I go through a bottle of Dave's every year or so! And *I* do it drop by drop.

It's all a balancing act isn't it? exercise, diet..trying to burn what you eat vs. the body's desire to store up for the "harsh" tiimes...

Think I'll make another batch of Jambalaya...
