Only because my family is STILL talking about our Memorial day meal, I thought I would post a VERY simple recipe for smoking a brisket. Not only will you REALLY enjoy the food..but your neighbors will enjoy the smell as well!!

Start with a hunk o' brisket. Put it in a plastic bag and add a tablespoon or so of soy sauce and a beer. Close the bag (and be safe..use another bag as well) and store for at least an hour if not overnight.

You also need to soak up some wood chips, so take your chips..I am a BIG fan of hickory..and take about 2-3 handfuls, place in a bowl and add water. Let that sit for at least an hour if not overnight.

OK, prep time. After all has been sittin for a bit, take your brisket out of the bag. Do NOT wash it off...but you DO want to dry it off with some paper towels. If you have not trimmed it yet, now is the time..brisket usually comes with a layer of fat on one side, but also has marbled fat throughout..so you really don't need that fat layer for flavor or anything so trim it off!

Then you need a dry rub. This is totally personal taste and can range from something you buy at the market (read the labels for crap!) or something you make. The base is usually paprika, cumin, cayenne and maybe some dried mustard. Rub it all over the meat.

BBQ time. If you use charcoal, you want to put your hot coals on one side only. If you use gas, just turn on one burner and remove the grate for that side. Put the lid on. When it is hot, clean the off-heat side..well clean the entire thing, but the off-heat side is where your meat is gonna go.

Make a smoke-bag. You take a large piece of foil and put in your drained wood chips. Now, here is a secret!!!--On top of the wet chips, put a couple of handfuls of DRY chips! This starts things off in the smoke bag and really helps things along! Now fold the foil over and seal the ends so you have a bag. Now with a fork or sharp knife, poke holes in the top of the bag..many holes! This bag now goes on the heat side of your BBQ. Give it a few mintues to start with the lid on.

Put your meat on the off-heat side and put the lid on. Now, you MUST cook this very slowly, so watch your temp! In my case, I not only have one burner on as low as it can go, but I also take a lava rock to prop open the top to let heat out! You REALLY want to do this slowly.

How long? 6 to 8 hours. And if your heat is right, you won't dry out the meat! AND..the neighborhood is gonna smell great with the smell of hickory! Let it rest for at least 30 minutes before serving. (I made a wonderful sauce, but that is a different post!)

I buy my brisket at Smart & Final so I get a huge hunk and then divide it up. I usually make extra too because of the time involved and it makes for some GREAT leftovers!

As to your new toy..you don't have it yet and when you get it, you still have to customize it..you let us know when you are ready to "reveal" it to us...THEN we will talk about smokin' a brisket!

Do you find that, when you atually HAVE a bike in your garage..that it calls to you? On those weekends when you don't have a ride planned...doesn't the bike just scream to be taken out?

I didn't use to do that..until I started cutting my hair on the short side...now I open my window all the time!!!
