Bagels Anyone?

So the wife and I are watching the food network and they have this show, The Secret Life Of.. and this time it was on bagels!

I like bagels, so I watch.

As we are watching this, the wife says, "YOU could make bagels". Hrmm, think I..ya know..I COULD!

So, off to the "Oracle Of Knowledge", also known as Google to find a recipe. Of course, there are thousands, but they all were similar so I got the most generic one and printed it out.

Today was the day to try my hand at bagels! It's a very basic bread dough recipe that is only allowed to rise for like 20 minutes.

Then you form your bagels..and this is HARD. (Let me rephrase..HARD meaning, hard to make em look right but easy to do..bread dough just feels great in your hands and no matter how they turn out, you really DO get the fun of playing with your food!) You see those guys on TV do it in a second..but this was my first try so I tried lots of variations. I think the best was, a thin snake of dough, put into a circle around the hand, and then rolled on the seam to make it round. The fatter ones lost the hole and the larger ones just came out goofy. Then you let those rise again for like 15-20 minutes.

Now the fun part..or at least, the part that *I* had never tried before. You put these things in boiling water! I know it is done, but *I* have never tried it! Very odd..they sorta cook and sorta don't.

Anyway, you then remove em from the water after 7 minutes and put on some toppings if you like. I went for toasted sesame on some and dried, grated onions on others. Then they pop into a 375 oven for like 30 minutes.

Now I gotta tell ya..I had NO idea if these were gonna be the best bagels I ever had...or dog poo.

Turns out, they weren't bad! I think I need a tad less sugar and tad more salt, but they tasted pretty darn good...and..the part that *I* was really looking at..the texture really DID taste/feel like a bagel!

Bit of work..not sure I would take the time to make em again...but you never know..maybe someday I will have some overnight guests and I will surprise em with homemade bagels.....

...naw..I'll just make pancakes!

Yes, pancakes from scratch! But hey..that's another post...

How cool! You made bagels! I'd like to learn how to make them, because I love bagels. It sounds like a lot of work, though. But I may try it one time.

Not really a lot of work..well..I DO have a machine to knead the dough for me

I will probably make em again..the wife had a good reaction to them with our pasta dinner last night.

I think it is more of an ego stroke actually...to say, "I made bagels".

I never should have given up bread for Lent. Today's the first day of Lent, and my mouth is watering just by looking at the word "bagels".

I'm also giving up chips and chocolate for Lent . Such a sacrifice!

Funny you mention those guys...

...when I bite into a Western bagel, I think..."THIS is a bagel!" So to me, Western is the index mark that all others are judged by!

So, I don't really hold a candle to a Western Bagel, certainly not on my first try anyway.

However, there is another brand out there..Lender's Bagels. I don't care for them (too bread like) and I DO think that my effort was better than the best that Lender's has...but hey..that IS a personal choice!

Like I said, put in "bagel recipe" in google and you will get a few thousand.

Again, I read quite a few of them and grabbed the "water bagel" recipe because it seemed to be the most "authentic". BTW, many recipes call for "malt". I don't keep that around so I substituted sugar.

I am not a catholic but it seems to me that if you are going to give up something for lent..then it should be something that you had WAY too much of on Fat Tuesday...

Store bought bagels, even those put out by Western fall short of fresh Western Bagels right from the store.

Noah's and Manhattan Bagels are very good fresh bagels too.

When I was with KGIL, Western Bagel was one of my accounts. Anytime I went in there to see Steve Ustin (the owner), he would load up a HUGE bag to take back to the radio station, complete with cream cheese, plastic knives and plastic bags so the employees could take any extras home.

Great deal for Western too because you KNOW that an on-air person with a bagel in his/her mouth is going to mention that fact!

I imagine back then that Steve was the older guy who started the company? He was a friend of my dad's. Now they are both gone I think Western Bagels is still family-owned and run by the sons.

Also, the main bakery in Van Nuys is their only location that is Kosher.

Back then, I was dealing with Steve, the son. The father had backed off by then, and I never really met him. (I think we passed each other in the hallway of Western once..but like I said, at that point, the son was in charge.)

Nice family too!

Very nice family. My dad spoke very highly of their dad.

I just got finished with an onion bagel from Western in fact Janice bought a dz. at the Northridge store yesterday. YUM!!!
