OK, to your question. Some foods LOVE to stick to the grill..like fish. Others naturally do not stick..like steak. (Beef will actually shrink and move itself off of the grill. Neat huh?)
So, it is a case of both using the right tools and the right grill prep. Most people do NOT prep their grill and that is where most of the mistakes happen.
First, you need a CLEAN grill. You don't want bits of old stuff in your food, so heat it up (with the cover on..you want to burn the crud off!) and then use a brush on your grill. (Personally, once a year, I toss my grills into the self-cleaning oven!)
After it is clean, you need to oil up your grill. There are products on the market that will let you do this with a spray can..but that is not only dangerous (remember, the grill is HOT at this point) but you are also putting some chemicals onto your grill that you may not want! Here is the drill. Take a small bowl and put in some oil. You can use normal veggie oil for this, but don't use olive oil as it burns too quickly. Fold a paper towel into a small square..say, 3inches by 3inches or so. Then using a pair of tongs, grab the paper towel, dip it in the oil and then rub generously over your hot grill.
You may also need to oil up your food. In this case, I DO use a light olive oil. (This also allows for the salt to stick.)
In the case of fish, you may also want to use a fish rack. This is a sandwich sorta rack that the fish is held between. It really depends on the type of fish and how flaky it is. If it is a halibut, you had better use the fish rack. If it is shark..well..you can treat that sucker just like a steak!
I have also heard of and used the method of cooking fish where the grill is prepped with a half of a lemon, rubbed all over it. This WILL work with a non-flaky fish and is great if your grill is usually used for fish because it helps get rid of that "old fish" smell. (Those that fish a lot use this method.)
One day, I will grill you up some eggplant and you might just change yer mind about that one too!!!
