Message #2439 of 2744  *NEW* To From Subject Date ALL saundrabeach   NEW RECIPE FOR POTATO LATKES (PANCAKES FOR MY NON JEWISH PALS) 5/9/06, 12:56pm (Last Edited: 5/9/06, 12:58pm) We went to a nice restaurant, and with my meal I asked for potato salad for a change other than the traditional "baked"... It was the most delicious. Brought leftovers home. This morning I made a couple of eggs and noticed I didn't have any bread for toast. Looking in the fridge, I saw the container with the left over potato salad and I... Put in in the pan after I took the eggs out and fried it in a pancake shape. Amazingly great! Who woulda thunk!!! I think I will definitely do it again but maybe add an egg to make it stick a bit better, but great without the egg too. Thinking of opening a restaurant now... Even with the mayo in the potato salad? That sounds interesting. By the way, Janice has a relatively fast and easy recipe for latkes. We get frozen hash browns and mix those with bisquick, onions, eggs, baking soda and fry.
