NEW RECIPE FOR POTATO LATKES (PANCAKES FOR MY NON JEWISH PALS)

We went to a nice restaurant, and with my meal I asked for potato salad for a change other than the traditional "baked"... It was the most delicious.

Brought leftovers home.

This morning I made a couple of eggs and noticed I didn't have any bread for toast.

Looking in the fridge, I saw the container with the left over potato salad and I...

Put in in the pan after I took the eggs out and fried it in a pancake shape. Amazingly great! Who woulda thunk!!!

I think I will definitely do it again but maybe add an egg to make it stick a bit better, but great without the egg too.

Thinking of opening a restaurant now... "The Spud and I"

Wow! Even with the mayo in the potato salad? That sounds interesting.

By the way, Janice has a relatively fast and easy recipe for latkes. We get frozen hash browns and mix those with bisquick, onions, eggs, baking soda and fry. We've tried frying in EVOO (Extra Virgin Olive Oil) and that seems to work ok and is healthier than the vegtable oil, though it can add an "olive oil taste".

It was really good.I was delightfully surprised. I am so bored with food in general. always looking for another way to make it interesting.

Janice's recipe sounds good too. Never thought of frozen hash browns. Time saving. Wow. Will try this too. Thank her for being innovative.

Try "light" olive oil. It won't burn as fast as "normal" olive oil and it does not have the olive oil taste.

Much easier than grinding all those spuds

You do have to continually drain the water from the bowl, but I think you have to do that with all potatos.

That's true..but I find that with olive oil, it is like wine..if you want a GREAT taste, you have to pay for it! And even then..you have LIKE that taste! I DO keep a bottle of GOOD olive oil around..but for the day to day stuff, I use the light olive oil. No taste yet all the goodness of olive oil.

Like wine, it also varies by region where the olives grow. A Spanish Olive oil is a LOT different than a California Olive oil. (Yes, we do have many areas in our state devoted to olive oil.)

No one "stomps" the grapes like my favorite "Lucy" of the "I Love Lucy Show" She was the best for sure...Still laugh each time I see that episode. I even have a Lucy Grape Stomping Barbie doll
