So the other day the wife and I are in Smart and Final and I reach for some pancake mix. Usually I like to use the kind that you add your own egg and milk to..and ususally that is "Aunt Jemima". This time, they only had the "add water only" type, so we bought it. I know..so far, this is really boring huh?
Well now, I tried those pancakes and they were just fine. Tasted wonderful. But then I got ta thinkin'...add water only? Where is my egg? Where is my milk? Oh, what they DO is in there in powdered/chemical form..but THEY are not in there. In fact..if you read the label...there are a LOT of things in there! Hrmmmm.
Time to break out the Joy of Cooking AND ask the Oracle Of Knowledge(Internet) about "pancakes".
Well wouldn't you know it...there is NOTHING to pancakes! Flour..baking powder..salt..sugar...and yes..THERE they are! EGGS and MILK! That's it!
No chemical additives to preserve other chemical additives. Just plain ol' pancakes. In fact, in my pursuits I found many people doing a little trick that my grandmother used to do where they separate the egg(s) and beat the whites and then fold the whites into the batter at the end. Makes for VERY fluffy pancakes and waffles!
(Speaking of waffles, I LOVE to take a couple of pieces of cooked bacon and put it IN the waffle mix right after putting it on the iron! YUMMERS!)
OK, so there IS no real point to this story. It's just pancakes, afterall....
